Ingredients:
- ½ cup cooked quinoa
- 2-3 cups spinach
- 1 tbsp. avocado oil
- 1 tbsp. fresh lime juice
- ½ cup fresh blueberries
- ½ cup sliced strawberries
- ½ cup sliced peaches
- ¼ cup walnuts
- Black pepper and sea salt (optional)
Instructions:
- Drizzle quinoa with avocado oil and lime juice, mix with fork to separate grains of quinoa.
- Add fruit to the quinoa and lightly mix.
- Serve quinoa mix on top of spinach. Top with walnuts, black pepper and sea salt if desired.
