Superfood Summer Salad

½ cup cooked quinoa
2-3 cups spinach
1 tbsp. avocado oil
1 tbsp. fresh lime juice
½ cup fresh blueberries
½ cup sliced strawberries
½ cup sliced peaches
¼ cup walnuts
Black pepper and sea salt (optional)
Drizzle quinoa with avocado oil and lime juice, mix with fork to separate grains of quinoa.
Add fruit to the quinoa and lightly mix.
Serve quinoa mix on top of spinach. Top with walnuts, black pepper and sea salt if desired.
